Use the "I" button and arrows on the right side of the steering wheel to select "trip computer" for the display. That will add the MPG bar graph to the info display.
The choice of "driver 1" and "driver 2" is made when you use a particular key to unlock the car. If you are seeing driver 2 and want to show driver 1, swap to the other key. The key selection also (optionally) adjusts the seat and side mirror positions to match the settings in the seat memory unit each time you unlock a door. On the Touring, one of the programming options is whether you want the seats and mirrors to do that.

If ever there was a good reason to recommend reading the Owner's Manual, our Pilot turned out to be a prime candidate. The array of options and features especially in the Touring trim make the typical "poke and test" learning method obsolete. After trying that method for a few things, and even after the 3 minute dealer sales guy "familiarization" we received with the car, I ended up going through the electronic versions of the manuals cover to cover on a couple plane rides. I can't open work stuff while flying so using the travel time wasn't a deep impact. The electronic version of the manual is available in PDF format from Honda, and is indexed and searchable. So much to learn! Lots of features you'll miss out on if you don't even know they are there.
Enjoy your "new" Pilot, and welcome to Piloteers.
