I replaced the rear differential fluid yesterday. I've read that some people drive around a bit and then add more fluid. But that's not in the service manual. I guess that should answer my question, but I figured I'd ask.

I normally fill it on a level surface, lightly tighten the fill bolt, back up and go forward a few times, remove fill bolt, top it off, then properly torque the bolt. No fluid drips out before the topping off, leading me to believe there are some pockets within the differential where the fluid settled into. It takes just a few pushes of the fluid pump, perhaps a quarter cup, to get it topped off.

There is a specific procedure outlined which calls for a top off after some driving and figure 8's... I have no reason not to do it and it took a surprising amount of additional pumps of fluid after executing the procedure. Leave the spare out, take it for a drive to a parking lot, do some figure 8's in both directions, bring it back and top it off. Done, it took an extra 30 mins.
