I switched all the tail light bulbs to LED, and after turning the car on to check if the brakes were working correctly the light came on in the dash?

LED bulbs require less current to operate than incandescent bulbs. This will trigger the brake lamp warning. The solution is either ignore the warning or install some resistors.

Did you swap out the side markers?
Those look great man
Hmmm, I just ordered some LED side marker bulbs. Should I not bother, or will those work okay without causing the dash light to come on?

Test them out as the T10s are an ez swap. Recommend getting RED T10s as the clear/white tend to look orangey rather than red.
