Default to all crawfish eaters...

I went to a crawfish festival today that was sponsored by a group that my wife works with, and...

We were GIVEN!!! about 100lbs of leftover crawfish, potatoes, and corn that were going to be thrown away unless we took them.

We're talking about a 120 qt cooler full to the top of fresh boiled crawfish and I've been eating, peeling, freezing, and drinking beer for th e last 9 hours

SCore for the guys that gave us the loot!!

Do you eat shrimp and lobster? Well a crawfish is about half way in between.

Don't knock em if you haven't had a true southern crawfish boil!

I was a "crawfish virgin" when I moved here about 15 years ago. Now I'm a big fan!

Come on, do you REALLY think that is what they are? I'll assume that you are kidding, but here is some info for the 'uninitiated'.

Crawfish are freshwater crustaceans very much like small lobsters--which they are closely related to. FYI, crustaceans include shrimp, crabs, and barnacles off the top of my head.

Most of them sold in the U.S. are harvested from shallow pond "farms" where they are grown--like 90% of catfish. They were growing them clear back in the Roman Empire and were a delicacy.

a gang of us from work just had a boil last night. 80 lbs of crawfish, 20 lbs shrimp, 12 lbs of sausage, lots of corn and potatos.
also 2 kegs.
good times, gotta suck the heads though!

Glad to see you guys getting back to some of the normal things that we southerners do. I'm originally from N.O. La. but left La. back in 1983 to move to Houston.

We had some REALLY nasty weather roll through early Saturday am, and I bet you were getting the same stuff for your crawfish boil Saturday night.

I hope it either stalled and came through after the party or missed you completely. I had some fond memories of Waveland, where fortunately, my elderly grandparents had passed on years ago. They surely would have had SERIOUS problems had they still been alive during the Katrina hurricane. THeir house was one of the typical style in Waveland, pier and beam, not a concrete slab.

I'm told that not one upright wall could be found at the homesite.

Back to the crawfish, these mudbugs were boiled by an outfit from Ville Platte, and they were great! Being a cajun myself, with help from other cajun relatives, we peeled and froze the entire ice chest last night.

Wound up with about 10 lbs of pure tail meat for future recipes.

yep, it hit us about 7. fortunately we had just finished cooking the last pot so we just moved the party into the garage.
